Is there any way to see how many models are created in dbt each month?

What are you using for your orchestrator/to run dbt?
We are using fivetran
At the end of each run, artifacts are generated which summarise the run including models created. I don’t know if it’s possible to access them from inside of Fivetran’s runner though.
You could investigate the dbt_artifacts package which will process this data for you and make it available in a table
